Regis Legain, Chef in charge of La Table Loire&Sens gained his experience in the South west of France, then in Quebec always alongside well-known Chefs. Since 2010, he has been working in Anjou. He welcomes you on a culinary journey with inventive cuisine. He is assisted by Martin Favry who have worked in the best restaurants in Anjou but also in Paris.
Passionate about cooking, they have chosen to offer you a seasonal cuisine. Vegetables are at the heart of our cuisine especially since the entrée and vegetable dishes are carefully prepared by the Head vegetable Chef.
A part of the herbs and vegetables used in the kitchen come directly from the vegetable garden in the cloister.
Let yourself be seduced for instance by a cold pea cream soup, foie gras, egg yolks vinegar and shiso leaves or by filets of red mullet served with a risotto in the paella way or also by calf sweetbreads grilled with whisky, fennel confit with lemon served with vegetables. And as a desert, why not taste our strawberry and rhubarb sable served with its mara des bois strawberry sorbet.
